A deliberately short menu
Dumbo is a smashburger joint. Beef aged two weeks, from butchers we can name: Aux Pâturages in Paris, HG Walter in London, La Granda in Milan. Smashed to order on a burning-hot flat-top, lacquered crust outside and juicy through.
Potato buns, baked by hand to our own recipe, soft and lightly brioched. American cheese picked for the way it melts, dill pickles, Heinz ketchup. Nothing on the burger is there by default.
The menu is short on purpose. It is what lets every burger, every basket of fries and every nugget come out the same, service after service, in Paris, London and Milan.
