2019

The beginnings

A 17 m² kitchen on rue Jean-Baptiste Pigalle, a discreet sign and a window onto the street.

No dining room. A stainless steel counter facing a wall of raw concrete, and a burger eaten standing up or carried away. The idea was to pay tribute to the original spirit of fast food, popular and straightforward and unifying, and to give the burger a sharper form. The name comes from a corner of Brooklyn the two founders like. There is no elephant.

Why smash

There was no road trip across America.

Two friends under thirty who built their food culture online, on videos and on endless scrolling, and the smashburger was the revelation: a patty pressed onto a burning-hot plancha, thin and crisp outside, juicy through. It became their idea of what a burger should be, and Dumbo became the first to serve it in Europe.

A return to the essentials, to raw ingredients and to the precision of craft.

2019

The recognition

Best Burger by Le Fooding, in the first year.

Then the kitchens came: collaborations with Septime and Folderol, and dinners for Virgil Abloh, Nike, Jacquemus, Beyoncé, Céline and the Festival de Cannes. Dumbo became the burger chefs eat backstage, a cult classic they go to for comfort and for precision.

Built around

Every address is drawn for its street, and every one is built around its kitchen.

Diner nostalgia against raw modernity: stainless steel and track lights, solid wood, yellow resin tabletops, bare concrete. The rooms are designed with Studio Uchronia and Rooda, and furnished with Alvar Aalto pieces for Artek.

Contrast dialed up, everything else stripped back. So the focus lands where it should.

2025 · 2026

The expansion

Shoreditch first, then Soho on Berwick Street, then Isola in Milan.

Seven addresses now, across three cities, with the same kitchen at the centre of each one.
